Gooseberry Jam from the Lush Orchards of McCluskiegunj

Lesley D Biswas shares her recipe for a gooseberry jam that is made in her community, the Anglo-Indians from McCluskiegunj in Jharkhand. Jam-making is an important part of the culinary traditions of this hamlet, and you can read more about it here.

Recipe: Gooseberry Jam

500 g fresh, ripe gooseberries
500 g sugar
Juice of 1 lime
½ cup water

Husk the gooseberries, wash well and place in a pan with the lime juice
Add water to this and bring to a boil
Reduce the heat and allow to simmer until the fruit is soft
Add the sugar and continue to cook on a low flame
When the sugar is dissolved, turn the heat up and continue to cook for another 10 minutes
To check if it has reached the right consistency, drop a little jam onto a plate and allow to cool. If a skin forms on top, it means the jam is ready
Cool completely before transferring to a jar
